A morning among the olives

The leaves turn silver before the sea comes into view. Our guide stops beside a split trunk and shows us where last winter’s pruning made space for new growth.
At the tasting table, we warm the oil between our palms. The first sip is grassy, with a little pepper at the finish. A heel of bread and slices of ripe tomato make a slow lunch.
